Honey Mustard Roast Chicken and Sweet Potato

This tasty meal is great for evenings when you want a home-cooked meal … without all the work. Simply arrange the ingredients on a sheet pan and roast. Serve with a side salad. Grab this recipe and a dozen more by clicking here.


  • 2 Tbsp whole grain mustard
  • 2 Tbsp honey
  • 2 Tbsp olive oil, divided
  • ½ tsp each salt & pepper, divided
  • 2 lbs (900 grams) bone-in chicken thighs, skin removed
  • 4 large sweet potatoes, peeled and cut into 1-inch pieces
  • 1 large sweet onion, cut into 1-inch wedges


  1. Position the rack into the lower third of the oven and preheat the oven to 450ºF/230ºC. Place a large rimmed baking sheet in the oven so it can preheat.
  2. Combine the mustard, honey, 1 Tbsp oil, and ¼ tsp each salt and pepper in a small bowl; spread the mixture evenly on the chicken thighs.
  3. Toss sweet potatoes and onion in a bowl with the remaining 1 Tbsp and ¼ tsp each salt and pepper. Carefully remove the baking sheet from the oven and spread the vegetables on it. Place the chicken on top of the vegetables.
  4. Return the pan to the oven and roast for about 30-35 minutes, until a thermometer inserted into a chicken thigh reaches 165ºF/74ºC. Be sure to stir the vegetables at least once about halfway through to ensure even cooking.
  5. Remove the pan from the oven and serve
